Tomato & Red Onion Crostini
One of our most popular starters in Chez K’s Bistro. If you want to try it at home here are the ingredients and cooking directions.
2 tomatoes cut in quarters and deseeded and cut into a small dice
2 red onions finely diced
3 cloves of chopped garlic
3bsp of chopped chives
Salt and pepper
Zest and juice of 1 lime
1 ciabatta bread cut into half and toasted on a grill or pan
2 tbsp. of parmesan cheese
Mix all the ingredients together in a bowl except the parmesan cheese
Lightly toast the ciabatta bread.
Once the bread is toasted place the mixture on to the ciabatta and sprinkle the parmesan over the top of it.
Bake for 5 minutes in the oven until the cheese is melted and the crostini is nice and hot.
Simply serve with some nice fresh dressed rocket leaves and a sprinkle of cracked black pepper.
